want something for road use as an attempt to get/keep fit, whats good? i get them tax free through work so i'll go up to about £500

I picked last years model so save on rrp, plus the tax free part. If you arent that bothered about the latest colours.
Some bike shops wont sell the last year models via the scheme as the scheme take 10% for admin.

If your not planning to go off road then you are best with a hybrid, also you dont need front susp, but at 500 it most likely come with that.
Swap the tyres for semi slick also, look for a bigger front chain ring as you will get higher top speed.
Other options is hub gears with belt drive, but think they retails at 800ish.
Then its down to the overall weight.

bike was £700 but after the tax stuff that get removed i got it for just over £500
i got a voucher for £800, got the bike and some odds and sods
works out at £9 a week, on my pay slip it say £13 but you dont get tax'd on it

Final value fee is 5% but changing so the bike gets valued so u might end up paying more than 5% so the scheme saves not as much as the current set up.
Good old goverment cut backs.
