Appbrain is a good app manager, a lot easier to find stuff than the market.
I'd also look into rooting the phone, takes litterally five minutes, as it'll open the phone up to a load more apps.
App wise -
Movies - Cinema Showings etc
AdFree Android - Remove Ads in applications (need rooted phone)
eBay app
Shop Savvy - Barcode reader, uses Google Product to find cheapest price etc
Barcode Reader - Simple Barcode reader
PingChat - BB/Android/iPhone chat app
SoundHound - Song discovery/search app
Quickpedia - Wiki app
Opera - Decent web browser
Multitask Manager and/or Advanced Task Killer - Close background apps (useful for clearing up some ram)
Autostarts - Allows you to disabled/enable apps from starting during boot (costs a dollar)
K-9 Mail - Decent email app, personally a lot better than stock mail app
Touchpal - enhances the onscreen keyboard
Games -

Angry Birds - Loads of new levels in the latest version
Super Panda - Panda meets street fighter

I also use Zeam Launcher over the stock Android Launcher, it's about the smallest and quickest launcher about (certainly better than LauncherPro).

Installed a custom ROM on my desire hd last night, rooted, overclocked it to 1228mhz.
Phones running sweet as now, i'll be honest though, the whole process was scary as i've never done anything like that before and I thought I was gonna brick my phone throughout

I'm using Leedroid just now, first one I've found that everything just about works, custom roms always have some problem.

Transdroid, I've used this for a while but for the first time there just used it to search for a torrent.
Search isohunt straight from the program, adds the torrent straight into my utorrent at home and also has a widget to show me whats currently downloading.
Brilliant program, something I couldn't find at all on the iPhone.
