Well the GSi Vectra B is faster than the SRi, Also they just look a hell of alot better

Why go for the SRi or GSi with no intention of going fast? There are a fair few variants of SRi, and two GSi's. 2.5 GSi's have more power than the 2.6.
But if you couldn't GAF about going fast, get a 1.8 with a GSi kit. Sorted.

There is not many major differences.
The difference is:
Bumpers.
Interior
Cams.
Wheels.
As said the only performance difference is the Cams.
EDIT: Also although the 2.5 GSI is more powerful than the 2.6, it has less torque.
