Should I sand between coats? Or just sand after the final coat?

I'm no professional by all means but a light sand with a high grit like 800 or 1200 in between each coat has worked nicely for me in the past, no idea if it's right but it worked for me

use 2500-3000 wet n dry for a quick rub between coats but make sure u clean in down before next coat
