Got a horse racing night at the local rugby club

currently we have two screens either end of the bar with Sky displaying on both,

what would be needed to get the DVD player to display on both screens?

Usually you'll use a AV splitter/amp like THIS (no doubt cheaper off eBay or Amazon/Play etc). However some players will feed all of the outputs, so you could use scart for one display and composite for the other etc; it's worth checking prior to splashing out on a splitter.

I'm not sure, I think its like multiroom, I'll have to go have a look this thursday
