Right what is a good Model to go for, am more inclined to go towards Canon but possibly Nikon, maybe £600 price bracket.

Any tips/advice?

Proper SLR or would you consider a bridge (ie L120) or even compact?

Definitely a proper SLR! Have a compact but, just doesn't have the features I would like these days. Want to take some night shots and some arty shots too.
