fitted a stainless steel manifold to my car but the lambda sensor wont fit on it now.
anyone know where i can get a spacer for the sensor so that it switches the angle it sits at so that it doesnt foul the fan?

The sensor needs exhaust gas flowing over it, any kind of adapter will pull it away from that flow of gas and give it an incorrect reading...

I guess so, but it'll knock your fuelling out which is far from ideal.
A proper solution would be to have another threaded coller welded in further down.
As for an adaptor, you'd need to find out the thread size and go from there.
