Will the shafts from my X16XE Corsa (Holden Barina) GSi be suitable for a C20LET conversion if i change the inner CV's?
I have a suspicion that its too late a car.......

No,proper 2lt shafts and hub conversion at the least,if you really feel the need to spend money on shafts then go to the motorsport big block conversion shafts and hubs but 2lt ones are good enough untill you hit silly bhp.

I know obviously the Corsa shafts are not up to the power of the C20LET, but in a physical/mechanical sense, will they mate up?

If they are the correct number of splines for the cav inners then yeah. If you're only running around standard power they will be fine for a while. People have used them with a lot of power without problems.
Shafts I use are both standard calibra shafts, split shaft and short one. Cost me £20 but i have the conversion hubs.

I'd go for Nic's set up if you can, I've seen the motorsport shafts twist.

Im in Australia so getting parts is slow and expensive. Would rather make my own and see how i go if its possible.
Will my shafts have the right amount of splines?
