Oh, what a shame. Keep the wheels.

If they're from a Golf they'll be anything from ET38 to ET42, there's no way to improve the offset other than changing the wheels.
The track is too wide for the car, which is why you're finding it pulls all over the place.
Wider wheels don't help and lower profile tyres give a noisier drive.

Sell the wheels, get some other wheels, stop racing about.

Because some people are so stupid they're happy to have a car that handles like a bag of shit as long as they get to have 22" spinning chrome pieces of wank fitted to a Fiat Seicento.
If you're sensible, you'll choose a set of 15" ET45-49 alloys with 195/45 tyres, get the car lowered about 35-40mm on a decent set of springs and then get all the tracking done.

Shouldn't be racing anyway, gimp.
Unless of course you mean on a track, but I'm fairly sure you don't.
I'm even willing to look like a fool if you prove me wrong.

Technically they DO fit, however the place that sold them to you was more concerned with making a sale than actually supplying wheels SUITABLE for your car.
Just because they fit it doesn't make them suitable.
