Oil cooler cools the oil. 20XE's have them as standard.

Ok
AFAIK, it cools the oil so it doesn't get TOO hot and loose it's lubrication properties.

dastek unichip is a 'piggyback ecu' it goes between the engine wiring loom and the ecu. basicly it takes the signals from the sensors and manipulates them then feeds the manipulated signals into the ecu. this allows you to set these signals to make the most of any modifications you have done to the engine.
mapping is the term used to describe the process of setting up the piggyback ecu to give the desired results.

i thought the oil cooler warmed the oil up so that you get more miles to the gallon

Power cap danny... i always hear that breathing mods work well on the XE block.. Then id go for headwork etc.. when that was done id get the ecu remapped to compliment the other mods.. and the cams can be done like you said!
