Got some mooring screws from Ikea to put up a shelf, the shelf is now moving room, any idea at all how to remove these mooring screw things?

Basically gets screwed in, the inside bit opens, to trap it closed, only idea i had was to get a longer screw, screw it back in to make the inside bit longer, and make it narrower again

What you need to do is screw the screw in about 6 turns and tap it in with a hammer, only gently mind, this will push back the nut part and straighten it out. the you should be able to pull it out.
I would rather lose by a mile because i built my own car, than win by an inch because someone else built it for me.
