I know there's software like Norton Ghost which does this, but I'm not sure of the best thing to use in my case.
Basically I need to replace the (C: drive) HDD in my server with a new one (at the moment it sounds like someone using an angle grinder), but I don't want to go to the hassle of re-installing everything.
It's only a little 40Gb HDD by the way.

Would I need to install Ghost on the server and run it off there or could I run it off my PC connected to the LAN?

If you connect new hard drive you can boot from floppy drive.
Ghost from one drive to the other

Ah right OK! I got some spare FDD drives kicking around anyway just in case I can't for whatever reason boot from CD.
