I have a Raid Controler with two new disks i want to mirror. I've no issues configuring this!
PC i'm putting this controller in already has a disk with all the data. What the best way to copy this disk onto the new Raided drives?

Image the disk, take old drive out, setup RAID, put image on new volume (which will appear as one drive once you've RAID'd) and give it some time to sort the mirror out.

I've used snapshot before

seriously You work in IT but dont know how to do something like that!?
Many tools will do an image-
Acronis
Symantec
Fog (linux)
If its just data NOT System info like OS and such i would take the disc out put 2 new discs in setup raid create the array and just use either a sata-usb or IDE-USB and copy the data off.
Why not 3 disc's and raid 5 anyway?

I've been using a shadow protect boot disc for imaging.
I've also got access to Google.
