Well having not jailbroken my iPhone since the very first 2G I decided to take the plunge with my iPhone 4. The JB community has definitely come a long way in the last 3 years and some of the additional functionality on offer is awesome. I want to keep the original look and feel of apple and the way they designed it with a few tweaks, so no silly themes etc.
So far I have:
SBSettings with the Serious SBSettings HD theme set to swipe down - Great little shortcut for toggle of wifi, 3g etc and very integrated as though apple designed it.
Installous - This is much better than it used to be and visually looks just like the app store (but free)
Barrel - Lets you change the transition between home screens - Set to 'Curl and Roll away' but offers vertical scrolling etc - Very slick and smooth.
Graviboard set to hold status bar - Bit of fun really, got carried away. Pretty cool tbf.
Fakeclockup - This is my favourite - lets you speed up the animations to give the impression the phones been overclocked - Set it to x 2.5 and it really does give the impression of the phone being ridiculously quick when going through the menus etc.
I tried Full Screen for Safari but wasn't keen so took that off. Going to have a look into 'lock info' tonight.
What other JB app/tweaks have you got or can you recommend?

Lockdown is basically an app which password locks folders, apps etc.

Android lock xt - pattern lock feature
Recent delete - delete call history
Open notifier - txt,email,missed call icon
Popup block - blocks notifications boxes
Infinidock - put as many as you want on the dock and scroll
Icon renamer
Fake operator - change name of t-mobile etc.
Elite pro hd is a excellent theme worth a try.

Basically a hack to the phones system. Lets you do a lot more with an iphone in terms of tweaking the settings, as well as being able to download all most everything thats in the apple app store inuding a ton more thats not in the app store.

A2H GO how did you jail break your phone? Think I'm going to give it ago on mine why not lol! And i no what you mean about the "tesco" logo lol, thing is my phone is updated with the latest software is it still possible to jailbreak?

Whats iFile and deep end?
I got removeBG for SBsettings last night which is handy.
A lot of people are raving about bigU movies but its $19.99 for an annual subscription and I'm too tight to spend £12 to see if its any good.
Might look into Lockinfo with the HTC style clock and weather, looks pretty cool.

Whats some good free themes available through winterboard? Had a browse through them and haven't found any really good ones yet.
Iv got Bitesms and sb settings too but thats about it. Tried lockinfo but didnt really like it

Tried lock info, didn't like so got rid. Tried winterboard, phone went slightly buggy, got rid.
If they put something similar to sbsettings in iOS 5 I won't need to JB....apart from the free apps
The widgets idea floating about on YouTube looks like a goos idea, swipe right for apps, left for widgets.

iFile is a file manager that lets you into the iPhone system and code. Like SSH, etc.
Deep End just creates a 3D effect on homescreens. It basically zooms in and moves the background a bit when you tilt the phone, making the icons "float" in 3D. Pretty uselesss but fun for showing to non-jailbroken friends. YouTube it.

Recently installed 5 row keyboard (so you get the number across the top) which is pretty handy and miltifl0w that shows the whole 'in-screen' app view in the multitask menu rather than just the app icon.
