It can be configured either way, so ask your IT admin in charge of it

Yes they are.
(I've disabled this though)
In out look there should be a folder called: Conversation History. Delete from there.
Open up Communicator Options > New Window Opens>Untick the Save my Instant Messages in the Outlook Conversation History Folder. {Towards the bottom}

That doesn't help if they are archived on a server

Yeah, big time
Logs were used in a disciplinary against a staff member here

Yeah exactly that, but the latest version (now called Lync iirc) has got quite funky AD integration and can also integrate with the likes of Cisco Call Manager so you can have unified presence and can combine standard telephone users and Lync users all in the same conference calls and shit like that.
You can also communicate to external Lync users who have got their own Lync infrastructure setup... it's a dream for most managers.
It's still got the old MSN messenger smilies though so all I ever use it for is the combination of smilies that make it look like somebody is fingering a sheep

It can be, though you can install on-premise servers for it too.

Yeah, that's local logs tho, that's always been disabled.
The IT guy did say it was logged on the server side. It's just I downloaded the manual for a read and couldn't see any reference to logs.
I assumed they'd likely log like timestamps of convo's maybe, but surely logging all full conversations would be gigs and gigs of pointless data?
Ah well I'd actually enjoy that chat about my personal conversations.

It's probably known as "archiving" in the manual

In our work, convo's are "logged" with security however I've never seen any evidence when shit has hit the fan proving they actually do.

There is archiving server and they can also be stored in the exchange database by the looks of it.
So depending how it's set up they can definitely have a log of it.
