I would personally lay plastic pipework fairly straight and usually poke up through the floor in copper, I hate speedfit on show

Lol a skim done 4 weeks ago is still a bit dark in my house its that cold

whats your plan if the toilet cistern ever need attention, like a valve ect?

The hotel I'm working on at the moment is using an almost identical system. In our case though it's covered with 18mm ply, tiled on the face and granite on top. Plumbers say if anything goes wrong they can get in through the box where the flush control is, looks tight to me though.
