It leaves room for future releases without much work.
No point in bringing out all they can now, when they can limit it to a smaller memory size, and then in 6months release a larger version and sell a load more.
Seriously though...who needs more than 16gb in music (purely music btw, not video and pics which this can do too). I have about 900 songs in my itunes at the moment which is about 4gb, so talking approx 4000 tracks just to fill it all with music.
