Can someone explain the double click multi tasking pane to me..
My understanding is that it shows your the currently open apps, is that correct?

Thats correct. Hold down on one of them and an X comes up, then you can select which ones you wish to close.

But thy aren't actually open. Some apps are designed to work with task switching and some aren't. It's up to the developer to get it to work right too n

How do people find Gmail on these?
Had a very very quick go there and it wasn't as simple as my Desire.

I would say they are, I left facebook in there and it opens up rapid but doesn't refresh news, closed it on that list, re opened and it regressed as though it just opened again

I use Gmail, find it fine. But then i only use it to open the inbox, put any important stuff in folders like receipts/confirmations/bills and delete the junk.

All it shows you is a HISTORY of apps.
Apps that are in that list "Might" resume if the developers have coded it but there is no way of knowing.
IMO its the very poor design. Apps which are not multi-tasking aware should not be added to it. Currently there is no way of know which apps are "running" in the apple sense of multi-tasking. While they might not be running they can be consuming memory and battery life.

If an app is not currently being used then it is no in memory and will not be consuming any extra power. When you close/switch app it's state is saved to disk and it is removed from memory. This is with exception to apps which are using one of the 7 multitasking API's, but that's a little more complex.
So in it's most basic sense, if you aren't using the app, it aint in memory and it isn't using battery power or processor time.
