All Torque - yeah that's a mod that people can download off the net iirc. Transfer it to 360 via SATA cable.

Complete the game first so you can race in the final competition. You'll need the Ferrari F50GT. Put it on Novice.
When the race starts, let the other racers get ahead of you and then pull a 360.
Go round the first corner and instead of following the track go over the rumble strips and straight over the grass, if you go fast enough you can get 'Air' here.
'2 wheels' can be done on the final corner (the tight hairpin left).
After that it's all about getting the other moves. Overtaking and drafting are easy. Then just make sure you pull off every drifting move (they're explained in the manual).
When you complete the race you get 'Clean Race', 'Clean Section' and 'Fastest Lap'
You also need to get 25,000 kudos in the Online career.

it's on xbox.com I can't access it at work though so had to do it from memory (plus my method on getting 2 wheels is different and works)
I can't remember the names of all the drifting moves but know how to pull them off. If anything this is the hardest part. It's annoying going into a corner and pulling the wrong one
