Every so often oil pressure goes above normal (60 psi) to about 70-80 psi, then drops very fast. And after being under the car I noticed the back of the engine is covered in oil which I think has come from the pressure release valve.
Why would my engine be doing this? How (if) can I fix it? And of course you can all guess what engine it is (c20xe).

What gauge are you going off? Are you sure it is accurate/reliable?
The relief valve will not vent oil pressure to atmosphere.
You can guess what engine it is? What an engine that is probably at least 15 years old and was spanked to fuck for half its life before being retro fitted into a car it wasn't designed for? Hardly an honest tale of an engines capabilities is it?

So going back to the issue, what gauge are you judging it off and how do you know if it is accurate?
Is this higher pressure on initial start up? It is higher then at about 4/4.5 bar and drops down to around 1.5 bar when at idle once it has warmed up IIRC.

Oil pressure gauge which is connected to an oil filter sandwich plate. As far as I remember idle it stays at 60 psi whether its warm or cold. Have seen it idle at 50 psi though.
