Given this economic climate, my management has growing concerns about laying staff off and them taking their work away with them to work self employeed etc
Is there any software to safeguard this from happening?
The only thing I can think of is software which might restrict you from copying large amounts of data, say above 20mb.
We have Windows 2008 on our storage server and the PDC is Windows 2003 Small business edition.
All data is stored on the 2008 machine.

As John says use AD-RMS, but you could also disable writing to floppies or USB keys in Group Policy
Obviously that doesn't protect against someone emailing themselves data, but that's more easily tracked.
