My phone is fucked I think, was intermittent to start with, usually solved by rebooting but now it's all the time.
If I open a video, music, record something, whatever, I have no volume bar, no sound from the speakers at all and my videos record with no sound.
Wtf do I do?

4S ios7 18months, yes.
Cleared a load of shite out of the dock connector, seems ok for now.

Dock connectors are about £4 off ebay, job done.

Robin,
If it appears more software that hardware, I had this all the time on my 4S.
towards the end, if I tried adjusting volume, the volume would mute and no matter what I did, it wouldn't return.
Using the volume buttons brought up the volume control, but there was no bars going up/down.

I think it was a dust issue, before, it was like it was plugged into a speaker dock, no volume control at all and speakers effectively muted, no volume bar showing.
Fine now though so hopefully cured for a while.
