Ok so ive got Bose Acoustimass 10 surround sound powered by a yamaha rxv795 Amp.
The amps pretty old but it does a good job, i'd like to find out what options there is for having ipod connectivity on this.
Any advice boffins???

3.5mm to phono cable, connect it to one of the phono inputs?

Quite like this amp, its old skool & fucking banging!!! 
Whats air play 
That dock station charges the iThing and gives me a menu display with remote over a lead?

Yes.
Air Play is basicly where you can play stuff on your sound system from your iphone/ipod over the wireless network.
If you dont want to spend a fortune on a new amp AppleTV has an optical out which could be connected to your amp (maybe) and can control music from phone over woreless agagin.

Sound quality a compromise over wireless I presume!?
I was going to get a smart TV in 6 months or so once they come down in price. Not a clue what Apple TV is

I've streamed movies from my iphone to AppleTV and found no compromise in quality.
Its digital to digital so no losses. You'd get more losses via a cable or a dock and phono connectioon to your amp.
