For those who asked how to do this:
Didnt think it was ideal posting in the middle of someone elses thread so thought I'd start a separate one:
Assuming you're using Windows and your iPhone is on 5.0 or 5.0.1.
1. Jailbreak your phone (if you don't know how to do this stop here.
2. Install OpenSSH off Cydia and download WinSCP from here - http://winscp.net/eng/download.php
3. Log into WinSCP (You can find your Wifi IP by going into Settings>Wifi, enter this as the host name, Username is 'root' and password is 'alpine'.
4. Once in you will be able to see the files on your computer on the left and the files on your phone on the right.
5. Download the files below:
EDIT: NEEDED THE SPACE IN MY DROPBOX THEREFORE IF YOU WANT THE FILES U2U ME.
6. Install the following apps to your phone via Cydia:
Winterboard
Gridlock
Iconoclasm
Move2Unlock
Spring Clean - Optional
Transparent Status bar for iOS4 - Optional
7. Go into WinSCP and in the right hand pane, navigate to:
Root> Library >Themes
Drag and drop the files you downloaded above into here (if you get an error trying to drop files in try the directory Private>Var>Stash>Themes instead:
White Clock & Calendar Lock.theme
SB Calweather
Quab HD.Theme
Along with the default themes already in there you should end up with something similar but not limited to:
8. When done, navigate to Root > Libary > Iconoclasm > Layouts
In this folder drop the Icon layout from above.
9. Go to your iPhone, go into winterboard and select the QuabHD theme, SB Calweather and White Clock & Calendar Lock theme. Then Respring.
10. Go into settings > Iconoclasm and select the layout > Minimal 3x3 Dense.
Everything should be pretty much sorted now, you can use 'Move2unlock' in settings to disable the lock screen clock/slider so it doesn't get in the way. You can also use 'Spring Clean' in settings to disable stuff like the status bar clock, battery and carrier name to make it look less cluttered.
You might find the Springboard widget shows Stoke on Trent....if you get this far I'll show you how to amend this to your area. If you want the opaque notification bubbles I'm happy to share these too.
Any questions just reply here I'll try to help, its more straight forward than it appears above. Once youve done this you'll be able to go on to macthemes or macrumours and get your own icons, widgets, lock screens and change them up as you like and create something unique.

No, 5.0 and 5.0.1 are both tethered JB using Redsn0w (windows).
My guess is untethered will be released on Christmas day since its pretty much done. Either way you'll be able to run it straight over the tethered. I've also been the tethered since the release on iOS5 with no problems.

It will all work the same only you might find that the Winterboard 'themes' folder is in a different place. If so just google it. You may also find some of the icons dont change over to the themed ones, in which case you just need to rename the filenames( Icon@x2) to icon@x2. ie. no capital.

cba getting stuck out without a phone if i ever have to turn it off. and in my experience with my previous iphones, im much more likely to have to reboot it at some point once its jailbroken. i'll wait for untethered

You can semi-tether them I believe, so if you do reboot, you just lose all jailbroken properties while the phone works normally.

My bad, you can semi-tether now so you can use your phone should it 'go off' whislt you're out and about.
I've never had the need to change to semi-tether so stil running untethered tbh. Only time you'll need to tether is whilst setting up some of the above as for example winterboard installation requires a reboot.

Just wondering why go to all that length to install a theme? I use winterboard , Im I missing something doing it this way?
Also do you know how to get sms bubbles on the status bar with the number of new sms received ? I did have it but lost it.

The above uses Winterboard, see step 9. It's just that because none of the above parts to the theme are on Cydia (because they are a combination of lots of themes, custom wallpapaer, icon layout etc) you have to SSH the files to your phone first. Also, because none of the parts are mine I can't redistribute through Cydia.
Edit - To answer your second part, I think you mean statusnotifier. The 'numbered' bubble is biteSMS though I think.

I think you have your weather thing wrong? You have to change var isCelsius = false to var isCelsius = true in the html file .

What firmware are you running and what version of Sprinclean are you installing?
If you're running iOS5+ use this list to make sure the version you're downloading is compatible:

thanks mate ihacksrepo worked a treat
got it all working now besides a few things , how do i remove the original clock from the lockscreen ? spring clean dosnt remove it . also the 3x3 icons dont line up with the shelving on the picture.
and how do i change weather from stoke on trent to crewe?

Looking good.
Theres an option in 'Move2unlock' to 'Hide Lock Screen Clock'. (Version 1.7 I've got again off iHacksrepo)
To change the icon position:
Winscp into your phone as normal and navigate to Libary > Iconoclasm > Layouts and right click the Minimal 3x3 (dense) layout you put in there and click 'edit'.
Once in edit the lower set of integers. (the top set determine how wide the icon columns are and the bottom set how far up and down the screen each row is).
You might have to play about with it until you get them lining up on the shelves, mine is:
<integer>50</integer>
<integer>134</integer>
<integer>217</integer>
Once you've edited the numbers, click save, on your phone go to Settings > Iconoclasm > and select 'Apply Changes and respring'. Edit again as needed.
To change the location of the widget
Again , in WinSCP navigate to the Winterboard Themes folder again and go into the SBcalweather folder. As before, right click the 'wallpaper.html' and click 'Edit'.
Scroll down or do a 'find' until you find:

var locale = "UKXX0142"
The "UKXX0142" is the code for 'Stoke', replace this with 'UKXX0228' for Crewe.
For the benefit of others to get your code go to www.weather.com and search for your area, in the address bar at the end of the web address you find the code you need.
Once done, save the file, go to Winterboard on your phone, reselect the theme, click back and select 'Respring'.

Dark Version of the wall incase you prefer it:
Just save it as 'Wall.png' and drop it in the QuabHD.theme folder in the Winterboard Themes folder (rename the one in there to wall2 or something so it doesn't get overwritten incase you want to go back)
Alternatively just apply it as normal through settings and turn on 'user wallpaper' in winterboard.
