what happens if i drive my car thats insured fully comp without modifications declared with my mods declared insurane goes up to 3k  but if i get pulled and the realise my 1.2 corsa is actually a 1.6 what will happen?

As long as it's not anything absolutely mad like an engine swap or anything I'd say you'd be fine. ie, if it's just alloys and bumpers then I'd imagine they'd not be that bothered.
