coolants coolant imo. just get a tub of concentrate and mix it yourself...
as for oil id imagine gm would be the best

there's different colour coolant
oil, what grade is what i need. 10w/40 etc.

10w 40 Semi Synthetic oil is what you need.
Coolant should be red but if you flush the system and refill from scratch it'll make no difference whatsoever if it's red, blue or green.

Just under 5 litres I think.
Coolant will be more but you can dilute, although I tend to run mine fairly strong mixture particularly this time of year.
Box will take just under 2 litres.

It'll take about 5Lof engine oil, without an oil cooler fitted, 5.5L with the cooler.
Just put 4.5L in then check and top up using the dip stick.
I'm unsure on gearbox oil grade.

Just looking on Opie, they don't list gearbox oil for an Astra GTE.
Mk3 GSi they list 75W/80
