just helps keep the temp down, its a bonus in the summer

Turns on the fan earlier, lowers the temperature that the fan comes on at.

it allows the water to flow through the engine more by opening at 82 degrees instead of 92 therefore keeping the engine cooler

Essentially it doesn't. It would still eventually get to the same peak temperature, it simply opens sooner so would take that bit longer to get to that peak temperature than the standard OE one does.
