About a month ago the brake cylinder burst on my corsa so got that all replaced
Driving along today and the exact same thing happens - foot went right down to the floor
Thing is this time there is no fluid lose
What could be up just to give me an idea of what to check? (they seem a bit better now mind)

Could be cylinders again, did you only change one and not check the other,
Or it could be air in the system,
Or it could be the break hoses are ballooning, check the ones at the rear you'll need 2 people.

Did you bleed the brakes after you changed the cylinder?

Would having too much brake fluid cause this to happen?
Would the cap on the fluid tank being loose cause this?

cap being loose wont mean anything, nore will if you filled it up above the max mark.

pump the pedal and then start the car and see what it does.. if it falls away you know the servo is ok..
but check the break pedal inside of the car to see wether there is any break fluid around it at all..

no pump the pedal up till rock hard then hold it down and start the car
if the break pedal goes away from you then you know that the brake servo is working ok
