I'm looking to pick up a 2nd hand Apple Macbook, just wondering a few bits and pieces. It needs to be Intel-based and either have or able to have Snow Leopard 10.6 installed. What should I be looking for? Basically, the cheaper the better.. it's not for anything taxing. Ta

Anything with an Intel Core Solo or Core Duo CPU can't run OS X newer than Snow Leopard, so make sure you go for something that has a Core 2 Duo or Core i3/i5/i7 CPU.
Avoid anything with a PowerPC CPU as they can't run anything newer than Leopard (and they are quite old).

What's the difference with the OS's? Is it easy to stick Snow Leopard on something that comes with Lion?

Someone like Dom may be better placed to answer your second question, but personally I don't see any problem downgrading to Snow Leopard if you really wanted to.

I think you could downgrade but you'd have to wipe it first as snow leopard won't install if something more up to date is installed
