Just got myself an IPad.

Is there any "must have apps"?
other than the ones i already use on my iPhone?

Also, its a wifi only version.. is there any way of tethering to my iphones 3g?

If it doesn't have the compass app then it won't have GPS - I think it's 3G versions only like you say.

Hotspot from your phone - you might need to jailbreak if you're on a gay network.

Just downloaded the google maps it seems so much better, easier to use and a lot more detail then the original maps supplied by apple good shout
