Not much to stir fry tbh joe
Sliced defrosted chicken, 1 good size breast per person
Carrots
Mushrooms
Bamboo Shoots
1 Onion, well chopped but not tiny
Green and Red Peppers, Sliced
Then you could make a chow mein sauce if you fancy it with noodles, hoi sin sauce works really well if you have it with rice.
Other options of stuff you can throw in are
Buttenut Squash cubed (had that on sunday and it was immense)
Boil up some rice and throw it in last minute to crisp the edges a bit
Pineapple cubes
Pretty much any vegetable works well I almost live out of my wok

Stir Fry's really couldn't be easier.
As a first pass, buy a stirfry vegetable pack from the supermarket. It will include things like mini corn on the cob, sugar snap peas and waterchestnuts, bamboo etc etc. It really is a case of just warming the wok, I use veg/olive oil with a drizzle of sesame oil, although thats not a must then throwing everything in together.
If you're doing a meet one, brown off the meat first before adding the veg as its better to keep the veg crunchy.
A lot of people will put the meat/veg on to a bed of noodles; I always add the noodles to the pan just before finishing; either use fresh/wok ready noodles or if you're using the dry variety, cook them folowing the instuctions (normally 3-4 mins in a pan of boiling water) then add them to the wok.
Either buy a sauce, blue dragon do some good ones, such as Oyster sauce, Thai Fish sauce, sweet chilli etc or add a good slug of soy sauce. Then serve.
Once you're confident with the use of the wok, experiment - I make a thai style stir fry which means lots of fresh, crisp flavours with a bit of a kick so fresh red/green chillis finely chopped, a bit of ginger grated, Corriander, veg and meat as before then the noodles.
Really is a simple dish as you can get away with throwing just about anything in

Oh, another great idea for anyone who is lazy or just wants a quick dinner when they get in without much hassle. Also great if you love a curry but your other half doesnt.
Really Lazy Chicken Curry !
Chuck some rice in to boil on a medium heat with more water than normal and lid on, Stick some breaded chicken in the oven on a try which has sides (i.e. not flat)
Whilst that is cooking grab together
1 tablespoon curry powder (or to taste)
1 tablespoon flour
1 tablespoon butter
1 cup coconut milk
Mix together the flour and butter, then the milk and curry powder. If you need to get rid of any lumps use a hand mixer but as long as you dont stop stirring you shouldnt get any.
I chuck a handful of raisins into the rice at this point but obviously not needed
When the chicken is almost cooked (ussually about 20 minutes) remove from the oven and using a sharp knife cut the chicken into thin diagonal slices but dont pull apart. Pour the "Curry Sauce" over the top and chuck it back in the oven for 5 more minutes. Drain rice, dish up.
Chicken out and put the entire breaded piece on the rice, for people who like curry pour on some sauce, if they dont then they have a slightly spiced piece of chicken which can be easily eaten with a fork. Total time, 25mins

Thought I'd put this in here after Mike asked me for it
Chocolate Flapjacks
150g Margarine
75g Brown Sugar
2 tbsp Syrup
200g Oats
100g Chocolate chips
Put the margarine, sugar and syrup in a pan and melt together
Take off the heat and stir in the oats, add 3/4s of the chocolate chips and mix together
Put everything into a lined baking tray and put in the oven for 25 minutes at 180c
Leave to cool and put the rest of the chocolate chips on top
It should all be set together but still soft
