I originally bought a simfree 3GS back in the day and dug out £420/£440 but cant warrant spending over 500 quid on a phone, so defo going to look at a 18/24month contract

john, have you checked out the photo settings (load a photo -> export etc), its some nice subtle changes there.
Also Settings -> Notifications -> DND is good.
Settings -> Facebook / Twitter for the social integration.

If there was to be some Lightning device to Analog widget, then it'll either be some device that allows the iPhone to utilise a couple of the ports on the Lightning port for analog line-out or some proprietary DAC specifically designed for the interface. Both of these will requiring licensing, both with be expensive.
From what i've read, all of the current docks have direct file access to the iTunes library and stream the audio off the device (like a mass storage device). The dock itself deals with decoding, playing and amplifying the media; unlike before where most docks simply amplified the line-out from the device.
And i imagine this is the route headunits manufacturers will take.

It's more than just a phone TBH, but yes it is expensive. Then again, people/idiots (including me) pay the Apple premium

Yep, however this has been a built in feature if the early ios5 firmware, with a simple unlock tool

And i suspect the new lightning port has 'authentication' for accessories, unlike the previous dock that worked around using resistance for accessory detection, so Apple will have far stricter control of what's allowed, what isn't and license accordingly which will automatically add Apple 'tax' to the price.
Lightning might support the option of changing a few of the ports to line-outs but you might be better off waiting for headunit manufacturers to start producing lightning compatible headunits.
The current dock uses some kind of hardware encrypted serial coms. To develop you need to use a special cable with the hardware in it and to sell devices you need to be licenced and by the encryption IC from Apple. The alternative is to do serial coms via the headphone jack like those Square card readers.
